Poached Eggs in Tomato Sauce (Part 2)

My husband requested for Poached Eggs in Tomato Sauce last week — definitely a good sign our early attempt was a success! So I excitedly bought the ingredients, but changed it up a little bit. Here’s attempt #2!

Poached Eggs in Tomato Sauce Part 2

Our first attempt was pretty good. You can read about it here: Poached Eggs in Tomato Sauce. There were three things I changed though.

All the ingredients you need.

First change: I added Parmesan Cheese to the recipe. We were craving a little sharp flavor that evening, and grated Parmesan cheese on our tomato dinner seemed to sound right. I added the cheese while the tomato sauce was simmering AND right before the serving the whole dish.

Caramelized chunky onions are always gooood.

Second change: I made the onion chunks larger. We love onions. We’d eat it whole if we could (right after it’s been wrapped in foil and baked for a long time — yummy!). We didn’t want the onions to get lost in the chunky tomato sauce so chunky onions was the way to go.

Third change: Instead of plain diced tomatoes, I tried diced tomatoes with herbs in the mix. This one had Basil, Oregano and Garlic. We threw in herbs during the first attempt, but if we were really pressed for time — I wondered if canned diced tomatoes with herbs would do too. The answer? It turned out well, but next time I’ll go back to plain ol’ canned diced tomatoes and add the herbs myself. This one made the tomato sauce taste like pizza sauce. Still delicious, but different from the taste I was craving for.

Voila, dinner eez zehved. In case you missed the recipe the last time, here it is:

Poached Eggs in Tomato Sauce

Step 1: Heat oil in a pan. Saute one diced onion till transparent. Throw in some chopped garlic. Don’t let them turn golden brown though!

Step 2: Pour in one can of diced tomatoes. Season according to taste. You can mix whatever herbs or ingredients you want. For a Mexican feel, stir in some pinto beans. For a spicier vibe, stir in chili, coriander and cumin. We kept it simple with basil, salt, pepper and sugar. Taste your sauce until you get the flavors you love! You can also opt to buy canned tomatoes with herbs. I’d recommend you get the plain ol’ diced tomatoes and add the herbs yourself. 😉

Step 3: When you’re happy with how your sauce tastes, make two holes in the sauce. Slide two eggs in. Let the sauce simmer around it. You can cover the pan to help poach the eggs.

Step 4: You’re done! Bring the pan over to the dining table — that’s your serving dish already! Enjoy the hot dish with sliced bread.

Baby Crostini

Another little change I made was buy crostini. I had forgotten to buy a baguette at the supermarket, and we were already rushing towards the parking lot when I remembered. Good thing there were kiosks right outside the checkout counters, and one of them was selling crostini. This Crostini Toast wasn’t bad at all for P58.

We had this Poached Eggs in Tomato Sauce dish with Broccoli. It was a pretty awesome dinner.

For attempt #3, I’ll definitely stick to diced tomatoes without herbs pre-mixed. I’ll add the herbs myself. I’ll also try stirring in some greens, although having the greens on the side was also pretty good. I’ll also make twice as much as this one — by special request again. Woohoo!

    Wow! May Part 2 pa! Forgot to update you that we’ve tried it out already. I thought “fail” sya but seeing the look on ze husband’s face plus the fact that there was no time to take a photo before everything disappeared, well… 😀
