Breakfast tortillas are the best!

Tortillas for breakfast? Yes please. They’re easy to prepare, super versatile and you can eat them on the go. My version of “on the go” means being ready to chase an active toddler around the house.

Breakfast

This one’s just a simple eggs and tomatoes tortilla. I use the whole-wheat tortilla being sold at French Baker. Their tortillas have just the right amount of thickness. I can stuff it with a bunch of stuff and it won’t tear, but it’s not super thick that tortilla is all I taste once I take a bite. Yes, put it on your grocery list — whole wheat tortillas from French Baker! (No, this is not a sponsored post from said bakery).

What goes in my tortillas depends on what’s for breakfast (which I don’t dictate). I like not knowing what’s for breakfast the next day so it makes the tortilla a surprise! Can you guess what’s in the next breakfast tortilla?

Yup, it’s corned beef with onions and diced potatoes plus scrambled eggs. Delicioso!

One time, breakfast was danggit (fried fish). Would it taste good in a tortilla?, I wondered.

Of course it did! Anything’s yummy in a tortilla!

I put too much filling though so this ended up like a danggit taco instead. Now can you guess what’s in the next breakfast tortilla?

Yeah, yeah, it looks weird but that’s tortang talong! Yummy with catsup.

This one’s peppered eggs and tomatoes — literally sprinkled with black pepper just so it’d have a different taste profile from the first one I had. Yummy too!

Now this next one fell apart! I put too much of the meat but it was super delicious too!

That’s longganisa with fried egg and tomatoes. Yummeh! Now what if a single egg is all you have? That works too!

But if you’ve got other stuff on the breakfast table, go pile it on! Here’s some breakfast sardines on that solo egg.

Break up egg and smother with sardines cooked in onions.

Breakfast tortillas are so fun to eat! They’re fun to assemble too. You just pile stuff onto the tortilla, roll it up and hope it doesn’t ooze out the other end when you take a bite. Best of all, you can eat them while you’re on the move AND with one hand. I think it’s the perfect breakfast for busy folks, especially busy Moms!

Sebastian’s Green Mango Sorbet with Bagoong

It was everything I thought it would be. Sour, refreshing, having a creamy consistency and just simply mind-blowing. Oh, Sebastian’s Ice Cream, I love you so. Thank you for creating this Green Mango Sorbet with Bagoong.

Bagoong on sorbet? Weird, right? That’s true. But it worked! My universe is so much more flavorful because of this. I can imagine pregnant ladies rejoicing at the reality of satisfying their cravings for ice cream AND green mango in one sitting. Yes, yes, this sorbet makes the world a happier place.

I wasn’t able to finish the whole scoop. My sisters and I shared it. Yup, this frozen delight is meant to be shared. I just don’t know about sharing with your date, especially if you get bagoong breath. But hey, who cares? Maybe this can be an acid test to know if your date is as game for foodie adventures as you are.

Our green mango sorbet was topped with the bagoong. I had read online that some preferred to have the bagoong on the side because it became “sebo” on top of the sorbet. I’m happy to report that we didn’t experience that at all.

Will I try it again? OF COURSE. Bring on the green mango sorbet and bagoong! IT’S MORE FUN IN THE PHILIPPINES! :P

If he says it’s a cat, it’s a cat!

The toddler is handing me a lump of Play-doh.

“Yes baby?,” I ask.

“Mmmmmmiiii!,” he squeaks. That’s the sound a cat makes according to the boy.

“You want me to make a cat?,” I ask him, just to make sure.

“Mmmmmmiiii!”

Well, that settles that. What’s more challenging than a big lump of Play-doh, eh?

Play-doh. What do we make today?

Head, ears, eyes, body, smile… voila! A cat!

“Mmmmmmiiii!,” the toddler meows as he runs off with his freshly molded orange cat. Guess it passed off as a cat! Even without whiskers.

Play-doh art: more challenging than writing a business strategy document but 100 times more fulfilling! I could do this all day! That’s what I was thinking until my toddler came running back to me.

“Errrrrrrrr!,” he says, holding another lump of Play-doh in his hand and making the sound of an elephant.

Uh-oh.

Looks like I’ve got my work cut out for me.

Double-purpose poster boards

We don’t have enough space to put up posters at home, but I really wanted this Alphabet poster for Timmy! I bought it anyway (about P40.00 from Goodwill) then taped it onto an illustration board of the same size. Voila! I’ve got a portable poster that I can just prop on a table or wall wherever, whenever.

The even more fun thing about it is that it doubles as a drawing board for the toddler. Flip the poster over and you’ve got the white part of the illustration board. Perfect for plopping on the floor with a bunch of crayons, right?

When the toddler is in artist mode, I just grab the poster boards and a-coloring he will go. He gets pretty intense with the crayons and I think he likes the big white space the illustration board provides.

Voila! Learning posters on one side, toddler art on the other. It’s learning and coloring fun you can take from room to room. :) I’m hanging on to these boards too! Who knows, I might just frame the toddler’s art someday too.
