Melon ice candy

It’s too hot, very hot! The weather makes me feel I’m wearing Katniss’ parade clothes in Hunger Games, only I can actually feel the heat. Not a good thing. So it’s ice candy time.

We had a bunch of melons at home, so I got one and made melon ice candy. It’s a really simple recipe and a really great thirst-quencher.

Ingredients.

Ingredients:
1 ball of cantaloupe melon, cubed
1/4 cup of sugar
1 tablespoon lemon juice

Throw them all in a blender. Blend till smooth. You can serve these in popsicle molds or ice cube molds. We chose the classic Pinoy ice candy bags! Freeze and serve cold.

Wasabi Cupcakes from Baked by Anita

When my cousin Josh was little, I remember him putting wasabi paste on everything he ate. Sometimes he’d eat it straight from the tube. Yep, he was a little Wasabi Warrior. I wonder what he’ll make of this Wasabi Cupcake my sister got from Eastwood Mall. Josh is in the States now. How I wish he could taste this!

Every weekend, food vendors and food lovers gather in Eastwood Mall’s Gourmet Market. One of my favorite stalls is Baked by Anita. They sell delicious cupcakes, my favorite being their Wasabi offering. Yummers.

Who ate the other one?

They sell cupcakes individually or by the box. I think the Wasabi Cupcake cost about P45.00. I believe it’s a little pricey for such a small bite, but hey, a little indulgence now and then doesn’t hurt! The Wasabi cupcakes are the ones with green flowers on top (which also have wasabi in them!). The heart-topped cupcake is Red Velvet, the other one Parmesan. Hey, who ate the other cupcake? Grrr.

See that creamy dollop on top of the wasabi cupcake? That has a little wasabi too. When you bite into the cupcake, you’ll encounter a little pocket filled with wasabi cream inside. That’s the kicker for me with this cupcake. I love, love, love that pocket of cream. It’s 1.22 am as I type this and I am friggin’ drooling at the thought of this cupcake. Love, love, love. (Josh, are you drooling too?)

This Wasabi cupcake has just the right amount of sweetness and just the right level of kick from the wasabi. It’s one of my all-time favorite cupcakes EVER.

The Parmesan cupcake and Red Velvet cupcake also tasted delicious, but I’ve had cheese cupcakes and Red Velvet from other bakeries. What makes the Wasabi cupcake most special to me is I can’t find this anywhere else. And if I did, well, let’s see if they’re as delicious as this one from Baked by Anita’s!

You can find Baked by Anita at the 3rd floor of the Eastwood Mall during weekends. Their stall is right across Gingersnaps. I’m not sure if their stall moves positions each weekend though. Their Facebook page is pretty active so go check it out for announcements!

I wish I could ship a box to the States for Josh. The frosting of the cupcakes might melt though. And even if they didn’t, a box of wasabi cupcakes in my hands is very, very dangerous. I’m a Wasabi lover too. Josh, let me eat a box for you instead. :P

A late Easter thanksgiving post

Now you see me, now you don't.Thank you Lord for the lower pain in my back that sent me to the ER on Good Friday. What I thought could’ve been kidney stones was muscoloskeletal strain, as the experts put it. Stress, I translated, caused by long moments at the computer sorting through strategies and articles, by carrying a toddler who’s becoming too heavy for my small(ish) frame. It’s a pain caused by good things. But yes, Lord, I will take it easy.

Thank you Lord for my husband who spends so much time at the gym. I complain about the lack of time he has for me and our son, but really, he’s spending more quality time with us. Gone are the bouts of coughing from his asthma, his need for a nebulizer when allergy season comes. The more time he spends working out, the stronger his resistance to sickness grows. The time he spends with us becomes more valuable, as we enjoy it more and not deal with any of his former sicknesses. It’s time valued in quality, not quantity. And yes, Lord, I will try to learn from him and take better care of my health too.

Thank you Lord for the clutter of toys that decks our room. They are signs of love from family and friends showered upon our son; signs that delight him when he wakes up, signs that fuel his imagination as he plays pretend. They are clusters of generosity and thoughtfulness. And yes, Lord, I will keep them as organized as I can and not get too upset when the clutter gets out of hand. I’ll try!

Thank you Lord for Agent Oso. That funny-looking yellow bear with green patches around his eyes looked really weird to me, but his show is nice and he amuses my toddler like no other character can. Lunch times are made better with that agent of a bear, as my son eats more heartily at the sight of him. Yes, Lord, I try not to make him watch too much television but indulgences have to be made especially when it means getting my son to eat more.

This is post-Easter reflection. I’ve been tackling so much work that I haven’t had time to blog or even go on Pinterest as often as I usually do. Again, thank you Lord that any delays in blogging or pinning is caused by work blessings. It’s never too late for an Easter reflection, now is it? It’s only been less than a week anyway. :)

Here’s to silver linings, to the stories in the shadows, to the peace that comes with time, to the joys that cause us aches and pains, to the aches and pains that make us appreciate the joys we have. Belated Happy Easter!

Artichoke Pesto from Stonewall Kitchen

Are you a pesto lover? You might want to try this new Artichoke Pesto from Stonewall Kitchen. I didn’t think pesto came in an artichoke variant, but hey, anything is possible!

I liked the consistency of this artichoke pesto — thick enough to be a dip but not too thick to be a sauce for pasta. What I didn’t like about it was that it was a little too seasoned for my taste. I prefer adding salt and pepper on my own, but this pesto was plenty seasoned. Given that, I’d recommend this pesto for pita chips, tortillas or soda crackers. It needs a neutral partner to show off its kick. We tried this at home with a pack of Sky Flakes. :)

Red Bean Milk Tea from New Sunbeam Restaurant

Have you tried red beans in your milk tea yet? I haven’t till we had a snack at New Sunbeam Restaurant. There were a lot of tent cards on the restaurant tables and posters around the place promoting the drink that I just HAD to try it. That advertising worked, dear New Sunbeam owners. It made me thirsty for your new offering. I wasn’t disappointed!

Red Bean Milk Tea

It was so delicious! I’m not sure what tea they used but it tasted good. This order had a lot of red beans and pearls at the bottom. Mix with your straw, sip and enjoy this delicious thirst quencher. A glass of this red bean milk tea cost around PhP 80.00.

Martine’s Wifely Steps: Writing What I Know

Martine of Dainty Mom is one of my favorite bloggers. She’s creative, motivating and her blog is a positive influence for WAHMs everywhere! It’s wonderful to have her write a guest post on her own wifely steps. Read on and be inspired by her story about one of the things she knows best: writing.

“Write what you know.”

I’ve heard this said many times. First time that I can probably recall this as advice was in my primary school creative writing class. We had to write an essay or two every week, and they had to be about what we were currently passionate about, thinking about, busy about. At that point, I knew I could easily write down what I knew. I wrote poems, songs, stories, and even joined writing contests within our class. In high school, essays were more common than Math or Science assignments, thanks to my homeschooling path that gave me the freedom to tailor my education towards writing.

Around 7 years into the writing profession (I had been working in a publishing company, then began teaching writing in a tutorial school), I realized it been a long time since I wrote for myself. In fact, it had been a long time since I had written just for my pleasure, to fuel my passion. Sure, I had odd jobs contributing articles to some obscure publications. Sure, I lent whatever skills I had to assist in that small publishing house. Sure, I’d dabble here and there at poetry, lyric writing, and even scriptwriting. Nothing lent itself well to me though, nothing except when I wrote from the heart, from my gut.

So what do I know?

I’ve always known I wanted to get married. I believe I knew what I wanted on my wedding day after watching Father of the Bride: a wedding in a church and a reception at home. And yes, I did just that. On April 12, 2008, I became the wife to my one true love. Today, we’ve started a family, with the addition of our son in late 2009, just three weeks shy of my 31st birthday. Now, the three of us live in a comfy three-bedroom apartment in a quaint little neighborhood in the vast city. The husband and I both work from home – something we’ve always wanted to do since we got married – so that we could be more intentional in our parenting of our child.

I know I’ve always wanted to be a mom. I’ve always liked kids, and I suppose it showed through the years, especially in my involvements with the children’s ministry in the Catholic community I used to serve in. I also taught in a tutorial school for seven years, a job that allowed me to mentor and be a big sister to around 40 kids. I was also active (and still am) in the homeschooling circuit, knowing that one day I will also educate my child at home, at least until he wants me to. But being a mom opened my eyes to a new way of appreciating children. I’ve hardly scratched the surface in terms of being a mom.

I know I am a writer. My grandmother said that writing was in my blood, especially since we’ve got some national writers in our lineage. I’ve always believed, though, that anyone can write: I used to tell this to my students when they’d write research papers, essays and poems. But while I believe that writing can be taught, it takes a different type of person to write about what she knows. I know how to write; I write for a living; but I’d say that I have so much yet to learn about writing what I know.

Today, I know one thing for sure: That I’m content, happy, and fortunate. I believe I am living the married, motherly life I always wanted, so yes, you could say that I am living the dream – my dream, that is. Of course, there are things to improve, a house to eventually own, a car to eventually pay off fully, and a family business to finally to see to fruition. But for now, I can say I am content, happy, and fortunate.

As a writer – both for others and for myself – I’m writing about what I know, what I’ve observed, and what I have yet to discover. At work, I can pour my creative juices into copywriting projects, blogs, even small businesses, and this thrills me. With my blog, I’m going back to the basics of real journaling, determined to mull over my life and commit all the golden moments to memory.

With all that’s to be taken in, I doubt I will ever have time when I won’t know what to write. If I do, please, just send coffee.

Flashlight fun for toddlers

Earth Hour was fun. It was a great time to whip out one of my favorite toddler toys — the flashlight!

A flashlight is one of my favorite items because it keeps my 2-year-old occupied for a (relatively) long time. His flashlight is the type that lights only when you press the button, so it’s a good way for him to further develop his, er, flashlight-pressing skills? I kid, I kid. But seriously, a flashlight can help improve a toddler’s motor skills and hand-eye coordination. Best of all, it’s a fun way for kids to look at their surroundings with a fresh perspective.

Some games we’ve played with his flashlight are:

  • Light the object. “Light Nonna’s feet!” “Light your shoes!” “Light Mommy’s mouth!” We shout out commands and the toddler joyously follows them. Hmmm, I don’t know if the lines are grammatically correct though.
  • Shadow play. Bunnies, dogs, snakes, birds. That’s all I can do with my hands. Timmy loves them all! Any other suggestions?
  • Jump on the light. I shine the light on random parts of the floor and the toddler jumps on them. Fun activity for kids with plenty of energy.
  • Check my mouth. Let your toddler shine the flashlight in your mouth. For the dentist in training.
  • Go explore. My fave game of all is just shadowing my toddler as he shines the flashlight on random parts of the room. His squeals of delight upon discovering new things are priceless.

This flashlight was a present from my Mom’s friend. (Thank you Tito!) Timmy loves it because it’s got one of his all-time favorite characters — Lightning McQueen! KA-CHOW! It makes flashlight play even more fun!
