Frozen Refrigerator Cake Bars

This intense summer heat is exhausting. Drinking lots of water, staying indoors to avoid sunstroke — these are just a few sensible things to do to stay safe from the bad heat. Then there’s the indulgent way of keeping your cool — frozen treats! Yum. Refrigerator cakes are a favorite snack of mine, and a few days ago I started enjoying them frozen. There’s no need to bake them so you don’t have to deal with more intense heat from the oven. Easy to make and refreshing when ice cold, these sweet frozen delights can help keep your cool this summer.

Frozen Refrigerator Cake Bars
Individually prepared frozen sweet goodness.

What you need:
1 250ml pack of cream (I use all-purpose dairy)
1 small pack of Splenda (optional)
2 bananas, sliced thinly
1 bowl of frozen strawberries, chopped
8 pieces of graham crackers
aluminum foil

How to do it:
1. Whip the cream with the sugar.
2. Smother one graham cracker with cream, then top with strawberries and cream. Cover with another graham cracker. Spread cream over that graham cracker, then top with sliced bananas.
3. Wrap in foil.
4. Repeat with remaining ingredients.
5. Freeze for at least five hours. Take them out only when you’re about to eat them.

This makes 4 frozen refrigerator cake bars. You can adjust the ratio of the cream and fruits to your liking. Feel free to experiment with fruit combos. Mangoes and peaches would be fantastic for this snack. You can even drizzle the layers with some chocolate syrup before wrapping it up in foil. Gah.

These frozen refrigerator cake bars are great on a warm summer afternoon or when the midnight heat is just too much. A quick bite is all I need and the frozen delight does its thing. It does help me keep my cool and make this summer heat just a little bit more bearable.
