Ginisang ampalaya at tokwa (sauteed bitter gourd with tofu)

Ginisang ampalaya (sauteed bitter gourd) has become one of our favorite dishes at home, especially with a new ingredient introduced to the saute: fried tofu!

Thanks to Jeanny for suggesting that I try minced tofu. I like my tofu fried, so that’s what I tried.

Ampalaya with Tofu

Fry the tofu in oil till golden brown on all sides. When golden, take out of the pan with a slotted spoon. Then saute the onions, garlic, tomatoes. When the flavors have blended together, stir in the ampalaya slices. When wilted, stir in the fried tofu. Season to taste.

Delicious! We cooked this healthy and yummy dish twice in one week. :)

    OMG Toni!!! I’ve been craving some good ‘ol bitter ampalaya!!!! Too bad Im still on my mastercleanse diet.
    I have 5 more days to go and Im off pig out!!! hehehhe

    hubby and i are cutting down on pork nowadays so we’ve turned to tofu as our alternative for dishes that are ginigisa hehe. i’ll tell hubby to add this to his tofu repertoire :D

    and i also think this is good for preggy you, because of the extra iron from the ampalaya :D

    Ganun ba! Yey for iron in ampalaya!!! I have ampalaya at home again. Will cook it for dinner if I’m not too tired :)
