Adobong Okra
Frustration is a bottle of curry paste you just can’t get open. Let me explain.
I was all set to make Okra Curry two nights ago. The ingredients were complete. I didn’t have raw ingredients for curry, so store-bought paste it was. On the way home, I was bubbling with excitement! I was craving for vegetables AND curry, so wasn’t Okra Curry a good choice? Yeah, I thought so too.
Until I couldn’t get the newly-bought bottle of curry paste open. Rubber clamps? Failed. Rag on the lid? Nope. Sheer human strength? Not enough. Tapping the lid with a spoon? Uh-uh. Breaking the bottle on the kitchen floor? Nah, aborted. I wasn’t that upset. But after what seemed like a forever of trying to twist the cap off, I gave up.
And had adobong okra instead.

Adobong okra is super easy. Saute chopped onions in hot oil. Add in chopped garlic. Slide in the okra (I used one bundle). You can use whole okra or slice it up in bite-size pieces like I did. After a few minutes, pour in equal amounts of vinegar and soy sauce. I didn’t want a soupy adobo, so just used 3-5 tablespoons of each. Done!
You can substitute okra with any vegetable. Ground pork could also be added for a meaty flavor. The dish was good. It’s a great partner to fried fish. I had it with galunggong and rice.
I did fulfill my craving for vegetables, but not for curry. Lesson learned: I will ask H to open all newly-bought bottles I know I will be needing that day before he leaves for work.

havent tried adobong okra or okra curry. Sound new to me and interesting. Might as well try making them both. Pero unahin ko muna yung adobong okra and fried galunggong….bagay!!!
Buti na lang pala, I learned to eat okra na, got to thank my makulit na officemate for that.

looks yummy, i also love plain boiled okra. an officemate once brought fried okra and it was tasty too. too bad, not so many people eat okra.

I personally can’t eat ampalaya or okra…At best, I would eat kangkong or cabbage.

Sorry to hear that you missed out on curry. I’ve found that a silicone potholder works really well to get lids off jars. Give it a try next time!

if only I don’t get itchy when I eat okra, i’d make this too. looks really good. hey, if you can’t make curry dish, make adobo..:)

Pinayhekmi’s suggestion’s pretty good. Heat is always a good way to expand a jar’s metal cap. Me, I turn on the gas stove and run the lid along the flame for a few seconds, then twist the cap open with a kitchen towel or rag. Works every time.
I love okra, but the Mrs. and the firstborn don’t, so it’s a moot point. If I eat okra, I’m the only one who eats it.

Wow! I’ve never had Adobong okra, I’m gonna have to try to make this dish. I’ve only had chicken adobo and pork adobo.
