Bibingka Souffle Bliss

All hail the Bibingka Souffle of C2 (Classic Cuisine) restaurant. I’m no culinary expert, but my tastebuds did tell me that this souffle was perfection. How the heck did a bibingka cake turn into a souffle? I have no technical words for you. All I know is that I was blown away.
I drizzled my dessert with a creamy coconut custard with toasted coconut bits. Then I sliced my spoon into the amazingly light souffle topped with quezo de bola shavings. At the bottom of the airy dessert were bits of salted egg. I then tasted the souffle, savoring every new texture and familiar flavor that slowly and beautifully made themselves known. Ah, Bibingka Souffle bliss.
While it does not have the heartiness of a typical bibingka rice cake, it shared almost the same warmth and comfort of a bibingka. It was homey yet indulgent, making this Bibingka Souffle a beautiful ode to a Filipino culinary classic.
Shall we go back for more?

Well, this is the first time I heard of Bibingka Souffle! I love Bibingka though. I could just go on and on stuffing myself with it.

Hey, just dropping by… I haven’t been here in a long time.
Wow… I didn’t know such a concoction was possible. I mean, bibingka cake isn’t exactly light… Cool, I’m intrigued. I love to experiment and update Filipino food into… well, Westernized techniques. Rather exciting… Sometimes successful… sometimes a failure… but always fun.
