Roasted Vegetables are Love



Roasted VeggiesRoasted vegetables — my favorite side dish! They’re healthy and full of flavor, that’s why.

Just quarter some onions and tomatoes and throw them into a baking pan. Drizzle with olive oil, season with salt and pepper. That’s what my sister did. She also threw in some red bell peppers, roasted till the skins were charred, then peeled the skin off. I threw in two garlic heads with their tops cut off, drizzled them with olive oil and wrapped each head in aluminum foil. We roasted the vegetables for an hour. This was a perfect side dish to a dinner of surf ‘n turf!

To enjoy the roasted garlic, just squeeze the sides till the garlic oozes out. You can eat it as is, or spread it on bread. Either way, it’s yummy! Sweet, tangy and spicy.

    Oh, yum, I too love roasted veggies… my absolute favourite combination is garlic, yams, and beets… hmmm, I should make that tonight! Thanks for the idea :)

    hey Toni looks good! next time try and sprinkle it with dried parsley flakes or sweet basil, you can do it fresh, pero it looks better when the herbs are flakey :)
