Move over, cones!

Instead of sugar cones to go with your ice cream, why not opt for something healthier: homemade cassava chips!
My cousin had a birthday party last Sunday. Dessert came as a surprise — ice cream and ice cream cones are our party staples and the cones that day were nowhere to be found. I thought I’d suffer from ice cream cone withdrawal. Not at all! I found the change refreshing! The cassava chips were deliciously crisp and complemented the ice cream’s richness really well.
Here is my Tita’s recipe for her Homemade Cassava Chips:
Grate cassava very finely. Then spread very thinly on cut banana leaves. Steam them for at least a minute or til they turn clear. Sun dry. Peel off from banana leaves. Continue sun drying till hard. Fry lightly in olive oil.
How do you eat this? Well, you can break off a piece of that huge chip and crumble it over your ice cream. Or you can break it into little pieces and eat it like nachos and salsa — use the ice cream as a dip. Click on the picture to how my niece ate hers!

hi toni, this sounds interesting! for us ilonggos kasi, ice cream is matched with barquillos (you should try it, too!), but i’ll give this combination a try.
