Anchovy & Garlic Pasta
I call this the pasta dish with a kick!
In a heated pan, pour in 1 tablespoon of extra virgin olive oil. Or if you’re not into measuring like me, quickly swig the olive oil around the pan - just 1 round will do. Pour in finely chopped garlic . When almost brown, stir in 3 to 4 anchovies. I used the ones that come from a can. Part of the anchovies will blend in with the garlic and oil. It’ll give the dish that kick I’m talking about. Mix in your choice of cooked pasta. I used spaghetti. Stir the pasta around the pan so it gets coated with the olive oil, garlic and anchovies. Add black pepper and chili flakes if desired.
I made a mistake though, I put in 2 T of olive oil. Since I was making pasta for 2, the noodles were extra-oily. Not very appetizing. So watch out for the oil. You can adjust as you go along anyway.
This is a very simple dish that you can whip up really fast. The salty kick of the anchovies blends well with the mild tang of garlic, then it all comes together with the comforting texture of the pasta. I’m imagining two little kids jumping on a bed waving their arms in the air, then collapsing into giggles on the fluffy bed.

I love anchovies and I love garlic and I’d totally go for this … if anchovies didn’t trigger my gout!

hmm, i love anchovies in pasta but never in caesar salad, i don’t know why!

I make anchovi pasta often; also add red pepper flakes and cooked broccoli ,
fresh basil & freshly grated romano. A favorite of ours.
