I just chuck pork or chicken or both in a pot with vinegar and soy sauce plus dry bay leaves. Pepper to taste .Simmer till tender, and there you have it!You can always add potato and boiled eggs. If it's so tangy add some sugar to balance the acidity, This is how my Mom makes adobo.

Well, I don't know how to cook so I can't help you here but I do eat my adobo, whether pork or chicken, with ripe mangoes! :P I do the same too when I eat beef steak tagalog. It was something I got used to while growing up. My mom used it as an alternative for vegetables (as I hated them).

Oh, by the way, I know my grandma's cook mixes peanut butter on her Inihaw na Liempo marinade.

hi toni! i sautee garlic, onion (lots of garlic is preferred!). Then i add the meat (either pork or chicken) until brown. Add salt and pepper to taste. (i use ground pepper, my dad uses whole, mum uses semi-ground. we all tinker in the kitchen!) Then i add soy sauce and vinegar (just enough per your standards) and water, immersing the meat. I let it be (under low fire to boil and simmer until the liquid is reduced.) If pork, I leave it to oil (Im not really health-conscious. hehehe); if chicken, I leave it until I have enough liquid for "sabaw sa kanin". Sabi ng parents ko, masarap naman daw ang adobo ko! =)

My mum's recipe: she puts everything in, then leaves it. Masarap din. =)

I hope i was able to help. =)
